Torta di compleanno

5 little butterflies for the first 5 years of MFSJ! MFSJ wanted a pink cake, her friend requested his favourite
chocolate cake...everyone was pleased with the result. The only thing we bought was the pink glaze. The mint leaves come from the garden: MFSJ knows how good they look and taste together with strawberries, so she rushes to the garden with scissors in her hands as soon as cake decorating requires a strawberry! this was our first trial...next time will be even better.
Recipe Here
This is a muffin-dough recipe, and it's really easy and quick to bake.
You will need two bowls, in the first one sieve and mix all the dry ingredients:
210gr flour
210gr sugar (any variety, this time we used sugar cane, which was available in our pantry)
1/2 sachet baking powder
pinch of salt
70gr unsweetened cocoa powder
50gr chopped chocolate (crushed easter eggs work just as well)
in the second bowl mix
3 eggs
130gr melted butter
150ml milk

Now, line two cake tins of different size (we used a 21cm and a 12cm round tins) with parchment paper.
Mix quickly the content of the two bowls (12 turns of your wooden spoon) and pour the batter into the two tins.
Bake at 180C for 30 minutes.
Once baked, wait for the cakes to cool down. Cut away any bumps (my cakes tend to look always a bit like volcanoes...so I had to slice the top off) and flip them upside down.
I decorated the large cake with pink glaze (but melted white chocolate with a few drops of beetroot juice would do as well) and placed the small cake on top. I applied whipped cream to the top cake, and used a pastry bag (ziplog bag with one corner cut off) to apply the cream to the sides.
decorate as you please.
Enjoy!

70gr cacao in polvere

Buon appetito...

the weekly menu

Pranzo sabato: pic-nic style
Pranzo domenica: gastronomia italiana
venite a cena?

ah, the joys of a cooker that works! A week ago the Culinary missionary awoke from her forced hibernation, with great satisfaction of her pressure cooker, the rice cooker and of Fraser The Freezer.

I even started again to compile the weekly menu...I know, not really italian this menu and recipes archive. But it comes from a very strong italic obsession for food, to which you have to add the monstruous hunger of the MFSJ when she gest home at 5pm, her tantrums (which go exponentially with the instrinsic tiredness of the subject) and the patience threshold of mum and dad (which is an inverse function of the tiredness of the subjects).
How can you answer the angeli devil's questions while you are mixing the sauce, the water for the basta boils over, the microwave calls you 'cause the spinaches are thawed?! And how can you possibly focus on a new tajine recie, the spice mix for a new curry, an absurd list of imhmmmtresting options for the husband's o-bento?! I can't...I couldn't.
But I found a solution. on friday night, TGIF (Thanks God Is Friday), we invent the menu for the week ahead. the weekly menu: the perfect product for my two obsessions: lists and recipes! MFJ is offered no alternative, and sits down with me. We peruse our recipe collection, we adapt dosages, find substitutes for impossible ingredients...and select the recipes which we'll use in the days to come:
Saturday lunch: pic-nic style
Saturday dinner: fish (hurray for Leiden market!)
sunday lunch: gastronomia italiana
Sunday dinner: japanese gourmet
Monday dinner: easy night (generally a soup, tobe served with croutons and other trimmings. All hand made, with the help of Frazer the Freezer)
Tuesday dinner: the carnivores (super-meaty dish...can be anything)
Wednesday dinner: fish (hurray for Leiden market and Fraser the Freezer)
Thursday dinner: pasta di mamma (infinite possibilities)
Friday dinner: eggs and surprises (dishes in which eggs and/or tofu are the base)
Included in the table there is even a section called "cooking ahead" (veggies soups, chicken stock, those two kilos of bolognaise sauce which I tend to always have ready "just in case"...they are all produced on saturday and sunday) and the beloved (and very-much neglected) "cake of the week". Now, before you say "BOOOOOOOOORING", here's a list of what passed on ou table in the last few days:: paella, buillabaisse with ruille, pizza (margherita e prosciutto e funghi), yakitori, double chocolate muffins, pasta al pesto, omurice... and in the next few days we'll have ertwensoep, sloppy joes, pasta ratatouille, ramen with eggs.
joining us for dinner?

Rabarbaro

Leggi tutto

2 uova. 150gr zucchero a velo vanigliato.

before coming to Kikkerland I knew that rhubarb was used in those candies my grandad liked so much, as well as in a bitter ominous alcoholic drink. I didn't even know what it looked like...mea culpa.

Then I met the highlander...and I have to say that for a Culinary Missionary wannabe, it was like meeting the Messiah...a true Epiphany. When he was in MFJ's kitchen I used to record every word (or what I thought were words...the accent is not exactly for anglophiles in the making!), every move...he is still my walking encyclopedia when it comes to patisserie. Not only that...I can always rely on him for odd ingredients (and for ME, Italian ME, black treacle belongs to the category).
And finally, all my recording of words and movements paid off. I bought my first 3 stalks of rhubarb, and I did what the highlander did (although it didn't say in the recipe I had) to make...a CAKE! The result of this first experiment was highly appreciated by MFJ, MFSJ and CSM (the Chestnut Stealer from Milan)...I'd like to ask the highlander's opinion, but the cake is finished...

Tarte a la Rhubarbe (specialite alsacienne)
Ingredients for the pastry: 200gr four, 100gr butter (unsalted), pinch of salt, 1 Tbs sugar, water as necessary.
Ingredients for the filling: rhubarb stalks, peeled and finely chopped. 2 eggs, whites and yolks separated. 150gr vanilla powder sugar.
Preparation: mix the rhubarb with a couple of Tbs of sugar, set aside. mix all ingredients for the pastry until the dough is smooth and not sticky. line a baking tin and place it to rest in the refrigerator for 1 hour.
beat the yolks with 75 gr of powder sugar. whip the whits with the remaining sugar and a pinch of salt. pre-heat the oven to 200C, line the pastry with the rhubarb drained from its water. sprinkle with extra sugar. bake for 20-30 minutes.
Pour the yolk cream on top, continue baking for 10 minutes. add the merengue, lower the temperature to 60C, continue baking for 20 minutes.

tortona

This year we ditched the pancakes...tehy are not such a novelty item anymore, and to celebrate the birthday of our little bundle of joy they didn't seem enough anymore. So...mum here designed a special cake, something that could well end up on the guinness book: no form of chocolate was spared for this one...and certainly I didn't spare on calories...I put custard and whipped cream as well! and yes, three candles.

to spare your artheries I won't put the recipe here. I can only say that it was really appreciated, especially by MFSJ who assisted me while I was making it. I don't know how much it costed her to NOT put her tiny fingers in the little bowls containing the smarties I was sorting by colour (if you want to know, blue ones are something of a rarity!)...maybe she knew it was all in her interest to keep her hands away from the munchies.
I don't know if there is a secret scores-list in the brain of a child, but if it were true, I'm sure this cake, together with the birthday party we threw for her, would place us high up at the top of the list for a long time. The little guests (Daniel, David and Jane) loved also the pizzette I made.
the celebrations ended on monday, with the party at the daycare. for the occasion I was allowed to bake cakes, "as long as tehy are not too sweet". So the classic 1-2-3-yoghurt came in handy...apparently really "lekker" since I didn't bring home any leftover!
MFSJ seems really happy of all the attentions. and the most clumsy mum on the planet is feeling somehow quite proud of herself...

coccole culinarie

while I am away, a few posts will automatically be published...I do have now a few afficionados and I want to make sure they keep coming to my blog!
This one is for my dear friend and collegue...Ms WCICW (What Can I Cook With...and I just realized that this is a palindrome! very appropriate, I'd say! Not only that, but the palidromicity of the acronym is preserved also in the italian version!)

My dear friend always asks me for recipes...this generally happens 10-30 minutes before I go home, so I need to think fast....anything "risotto" would do...but it's not always easy to improvise a full italian-style menu with the ingredients SHE has in mind (and in her fridge)!
...since I won't be there to give her suggestions, I compiled a list (am I or am I not a MOAL?) of my favourite websites for cooking:
La Cucina Italiana is a fantastic website of proper italian food (best italian food magazine, in my opinion). I used to visit this site almost daily, until I decided to explore new culinary horizons...the italian version is much better, so if you fancy a spot of translation, try to use this amazing dictionary online.
justbento and justhungry are two amazing websites. Maki, a japanese living in Switzerland, is an amazing chef, and her descriptions are so detailed! I am never scared of trying any of her recipes, because I know that anything she suggests will be a huge success.
As a Culinary Missionary in the making, I often bump into ingredients that I never heard of before...I am then forced to have a wiki-moment, find out what the heck the ingredient is, and eventually find a suitable substitute.
I have to admit that although I WAS a big fan of dear Jamie, I now prefer Delia...he is very creative, but all the bashing and wacking and "bits of this and that" works well in front of the camera, not in a normal kitchen. Delia might be good if you have insomnia, but oh boy: her recipes, followed as if they were gospel, work miracles! Oh...I almost forgot: Dear WCICW, if you click here you get the recipe for the chicken in milk, the one that can have LOTS of garlic in it ;-)
For british desserts, my hero is James Martin...my super-friend Sweet Tooth Chris says that you can’t get better than him, and he did love my experimenting with sticky toffee pudding.
Unfortunately I have my own set o recipes for italian desserts ;-) so no links available here, apart from those few posts on this blog. and let's not forget the scientific mousse.

Zuppe e minestre

lekker soepje mama!

I don’t know if when you people asked me for recipes, you meant “soups” as well. In fact, I think most of you will be rather disappointed. but it's your fault: if you don't specify what recipe you want, you get what I decide to write!!!

My idea of soup evolved when I emigrated…before that, the only “liquids” which I would cook were minestrone soup, vegetable stock and meat stock. Boooring. Now those three musketeers are merely the starting point of my soup extravaganzas…and the list of soup recipes is getting longer and longer.
Especially because MFSJ looooooves mama's soepje.

Cauliflower soup
Believe me: it’s not disgusting as it might sound. It’s the best way to get MFSJ to eat the white brother of her favourite broccoli.
Ingredients: 1 cauliflower, stock (your pick), salt, pepper and nutmeg.
Preparation: clean the cauliflower and dice it. Place it in a large saucepan and add stock to cover it. Bring to a boil, lower the heat and let simmer for a good 2 minutes. Whizz it in a food processor and add salt, pepper and nutmeg to taste. To be served with toasted bread and a drizzle of olive oil. Variations to this recipe are endless, but I did try: substitute nutmeg with rosemary (cook it with the soup, and a twig on top at the end for decoration), addition of single cream (yummy), addition of croutons (sprinkle with olive oil, salt, crushed garlic, then put under the grill).

Red lentils soup
Ingredients: 1Tbsp olive oil, 1 small leek thinly sliced, 1 carrot, minced, 1 tsp of grated lemon zest, a pinch of cumin (unless you are my mum and can’t stand “the stench of that thing”), 250gr red lentils (to me they look more orange then red…but anyway), 500ml stock (your pick, although I prefer the vegetable stock in this case), same amount of water, salt, pepper and 2 tbsp lemon juice.
Preparation: fry the leek, the carrot, the lemon zest and the cumin in olive oil. Add the lentils and stir around until they are coated. Add stock and water, bring to a boil, let is simmer for 20 minutes (or until the lentils are soft). Whizz it and add salt and pepper to taste. Serve with a drizzle ofolive oil and warm turkish bread.
lekker soepje mama!

Microonde

Leggi tutto

I think I should change the title of my blog with something more kitchen-like! This post is yet another recipe! I had promised it to The Cestode, when we got talking about microwave ovens, but I don’t think he ever received it. By the way: what do you call your oven?! Do you have a pretty name for it? I use mine all the time, and I feel bad for not having given it a suitable name yet: without him (yes, it’s a HE), the Culinary Missionary would disappear in no time.
Anyway: the recipe...it’s part of my “cake of the week” challenge, which is now more of a “cake of the month or whenever I have time” challenge: microwave sponge cake!!!

Ingredients for 6 persons: 100gr flour, 1 tsp baking powder, 100gr powder sugar, 100gr softened butter, 4 yolks and 4 whites, 4 Tbsps milk, 3 Tbsps melted butter.
Other useful things: two cake moulds, round, 20cm in diameter, suitable for microwave cooking, and paper parchment.
PROTOCOL: one thing I always forget is to prepare the cake tins in advance! So, please don’t do like me and get them ready: grease them using the melted butter and place the paper on the bottom of BOTH cake moulds. There you go: done! At least you won’t end up like me: holding the bowl with the cake mix, and nowhere to pour it!
Have you prepared your moulds? Yes? Sure? I’m not going to repeat myself...now we make the cake!
Whisk the egg whites to stiff peaks. Beware: that pinch of salt your grandma always added is NOT necessary, but a little bit of cold water will perform miracles. Whisk yolks and sugar until fluffy and creamy. Sieve the flour with the baking powder and add it to the creamy mix. Slowly add the softened butter, and fold in the whites.
Pour half of your dough into one of the moulds. Cook at maximum power for 3 minutes. Press the center of the cake: it has to spring back. The cake will have detatched slightly form the sides.
Let it sit outside the oven for 5 minutes, then flip onto a plate. Cook the other half.
Add generous amount of whatever filling you want (we go japanese and add atzuki cream), place the second cake on top and go wild with the frosting! The one you see in the picture was made last march: atzuki cream as filling, chocolate and smarties as frosting...all to make MFSJ happy after a nasty fall.
Frosting is somewhat necessary: cooking with microwaves means that your cake does not change colour: it remains yellow!!!

Cubetti Tricolori

My friend “il Cestode” can be proud of the title of this post...it’s indeed the title of one of Frankie H NRG’s pieces...not my favourite, but in this context it’s perfect. Why? You won’t believe it, but this post is about COOKING...of a special kind: we are talking baby food! Here in Kikkerland (as the autochthonous people refer to this country) the frist baby food tends to be rice flour mixed to milk (powder milk, that is). I never got around understanding those tables that they give out at the Consultatie bureau, so I did it my way...when I was breastfeeding I had a very special consultant, who wrote me directly from Malaysia, but for the first baby food of MFSJ, I went back to my roots...after all, mum’s cooking is always the best.

The nighmare of vegetable stock takes you, italian mother, when your baby is 5 months old and doesn’t leave you for a LONG, LONG time. The reason why is soon explained: italian pediatricians oblige you to boil DAILY fresh vegetables, all for the sake of your little one. But when you work all day, unless you have a slave at home (or grandma living in the flat below yours), do you really want to boil potato, carrot, zucchini every day? What do you do? Me? I made a monument to my pressure cooker and my friend Fraser the Freezer. I boiled what I had to boil, then froze the stock in portions (the exact amount you need for each feeding, I did that every Saturday afternoon, and it lasted me the whole week). I used to whizz the vegetables too, individually, and place the puree in those silicon moulds for ice cubes. Once frozen (I waited a day or so), I moved the cubes to ziplock bags…I had cubes of frozen potato, frozen carrot, frozen zucchini and whatelse….tricolor cubes! Of course the vegetalbes changed depending on the season and on what MFSJ liked…to prepare the food, just microwave the stock, add the right amount of cubes (mix as you want, I used 6 cubes in total), rice flour, a little olive oil, parmesan (yep…that’s a MUST in italian home-made baby food) and meat. Oh yeah…the meat: I used to cook that one too in advance, and mince it and make little balls that I would freeze in those moulds…one portion was 2 cubes.
I don’t know how italian mums survive…I just know that after one day of running around, the mother (me) would come home exhausted and MFSJ was as hungry as a littel leech! I was able to feed her within ten minutes from entering my front door. Hurray for technology…and the tricolor cubes.

I know...I do post a lot of recipes...but this one is special, fantastic...the ideal protocol for this Culinary Missionary-meets-wannabe scientist!!!
it's a scientific chocolate mousse: ready in ten minutes...only ingredients required are 1 choccolate bar of good quality (I tried "pure", but fondant would be better), water, a calculator.

Now, look at the composition of your chocolate bar (you know, that little table that tells you calories, proteins, fats and sugars) and write down the grams of fat (keep in mind that those tales refer to 100 grams of product).
now, multiply that number by the weight of your chocolate bar in grams (sorry...we go metric here...if you want imperial, convert it) or by the total weight of chocolate you want to use. divide the lot by 34. the number you get corresponds to the cc (cubic centimeters, or milliliters, ml) of water needed.
measure the water, keep aside.
Melt the chocolate (any method would do, as long as you don't burn your precious chocolate...I put it in a little pan directly on the stove). once melted, remove from the heat and add the water (yep, old, and yep, all at once). mix until smooth (it will get smooth, don't worry...just mix gently). let it sit away from the heat for 2-3 minutes, then pour the mix into a chilled bowl places in ice. whip it up and put it in the fridge.
how does it taste? well, ehm...chocolatey? it's the same taste you'd get from eating your chocolate bar, so it can be a bit bitter. but the consistency is fabulous...soft, smooth, irresistible, as demonstrated by my faithful assistant!
you could try with sweetened water, but the sugars might change the viscosity of the liquid and the result could be less fluffy...but hey! please experiment and let me know! we just ate it, and we just added a diced banana.

now, for the explanations: the recipe is not mine. I discovered it because I read an italian blog called "science in the kitchen", but the recipe is by a certain Herve' This, founder of Molecular gastronomy (no kidding, it does exist!).
The recipe is known as chantilly chocolate, aybe because the creme chantilly is sweetened whipped cream with a vanilla flavour, invented by Francois Vatel and served at the banquet in honor of Luis XIV held by Luis Condé at Chateau Chantilly.
Anyway...my scientific mousse is called chantilly chocolate becase the melted chocolate is whipped up like you'd do for cream...and cream has afat content of 34-35% (hence the number in the little formula above..you want to imitate the fat content of cream). on top of that, cream contains fosfolipids, which act as emulsifiers...fosfolipids areweird molecules: their "head" loves water, their "feet hate it"...their ability of getting water and fat to mix comes form the fact that they sit with their heads in the water and their feet in the fat (oh dear...I hope my chemistry teacher is not reading this one). also chocolate bars contain emulsifiers...don't worry: nothing scary, all natural! it's called lecitin, and it's naturally contained on cocoa...just make sure you buy a good quality chocolate bar.
ok, I stop playing the teacher!
Mr HTML suggested me this video: have a look, if you want to see how to make this recipe.
to conclude: this one has been added to the list of recipes to be suggested to those who claim they hate cooking...the name of a certain friend from across the ocean springs to mind, but don't worry, my friend: I won't tell a soul ;-)

Marmellata

Well yes: I even made jam during our last saturthlon! Apricots looked so tasty at the market, that I didn't resist and bought some. unfortunately, they didn't survive the journey (could it be because of the sheer weight we put on them, inside our shopping bag? lots of veggies and fish?) I really didn't want to waste them, and since they were already mashed, I put the lot (minus the stones) into a pot, added one peach, one apple (for extra pectins), grated lemon zest, a bit of water and half the fruit weight in sugar. I brought it to boiling point, lowered the heat and let it simmer until it reduced a bit.
the special sterilizer for MFSJ bottles and dummies came in handy: it sterilizes in 5 minutes, using steam.
result? 4 pots of home-made jam, plus a couple of tablespoons for tasting. MFJ can't wait to try it on ICE CREAM.

Gembercake

another big blow for Miep van der Berg: her gembercake was not appreciated by MFSJ. A recipe safely kept in my recipebook for the last 5 years, a kind gift from Cori...Cori is a little lady roaming the corridors of the department where I used to work...I never understood what she was doing there, but no one else seemed to have the answer to my question~
back to the gembercake: MFSJ takes out all the bits of candied ginger!!!! but MFJ loved it...so now I am faced with a big dilemma: bake it for my husband or change recipe for my little one?

For now, let me post the recipe...
INGREDIENTS: 125gr softened unsalted butter, 100gr brown sugar, 3 yolks, 3 eggwhites whisked to stiff peaks, 125ml buttermilk, a 240gr pot of candied ginger (in syrup), 250gr wholegrain flour, 1/2 sachet of baking powder, pinch of salt.
PREPARATION: whisk butter and sugar until you get a fluffy and light mix, add the yolks. sieve the flour (re-add the bran, which won't go through the holes) with the baking powder and the salt. add a third of the flour to the egg-mix, then half buttermilk. continue adding flour and buttermilk alternating them. add ginger and its syrup only at the end, then flod in the eggwhites. bake at 160C for 70minutes.

Bitterballen, by Miep van der Berg

Volete proprio proprio assaporare le delicatezze d’Olanda a casa vostra? Allora provate queste.

30gr burro, 30 gr farina
Scalogno tritato fine (oppure spring onion)
Sale, pepe, noce moscata, aromi
E cosi’ potete andare a dormire.

Do you REALLY want to taste a dutch delicacy in the quiet of your home? Then try these. You’ll spend a lot of time on them and in the end you’ll see it would have been better to make pizza from scratch…bu that is not a dutch delicacy…right? Miep Van der Berg has worked out for all of you a variation (the result is in the picture above)on a recipe which she found on coquinaria.nl. Ready? Let’s go!

Ingredients:
250ml meat stock, home made, of course
300gr minced meat (in theory you should use the cooked one that you got from making the stock…but Miep decided to really splash out)
30gr butter, 30 gr flour
Finely chopped shallot (or spring onion)
Salt, pepper, nutmeg, herbs
Preparation: saute’ the onion in the butter until soft, then add flour and mix vigorously. What you just made is called roux. Add the meat, and if it is raw cook it thoroughly before adding the stock. Simmer for 5 minutes, remove from the heat, let it cool down completely and put in the refrigerator to solidify (starches do that, right?). Once solid (it doesn’t move even if you shake the pan) roll out little balls (circa 3cm in diameter) and cover them in flour. Place on a tray well separated and with a lot of flour around, and freeze them. Go to bed and rest well.
When you really crave the taste of Holland, take them out of the freezer, roll them in whisked egg, then in breadcrums, reapeat once more, and fry for 5 minutes at 180C in plenty of hot oil. Serve them piping hot, with mustard sauce or ketchup (MFSJ likes them red).
And? Well...let me tell you: they taste good, but pizza is better. Miep, deeply hurt in her pride as Missionary Culinary for the Netherlands, said she’s going back to study some more recipes and won’t tell us when she’ll be back…hopefully for the second edition of the Dutch Week next year!!!

Porcellum Coriandratum

Apicio dice cosi'
Assas porcellum diligenter, facies mortarium sic, in quo teres piper, anethum, origanum, coriandrum viride, admisces mel, vinum, liquamen, oleum, acetum, defritum. haec omnia calefacta perfundes et aspargis uvam passam, nucleos pineos et cepam concisam et sic inferes.

Chi vuol venire a cena?

...the secret is in the coriander.
it's a herb very much loved by ancient romans (the title comes from Apicius' de Re coquinaria, AD 230) but not used in Rome anymore!
The leaves resemble parsley (they do belong to the same family) and taste like it, but fresher and more "lemony", although there are persons who find it soapy and, ultimately, disgusting. the reason for so much fuss about cilantro seems to be a specific molecule present in the leaves. It's not yet clear if it is the presence or the absence of a specific olfactory receptor for said molecule that makes the taste much hated/loved by a part of the population
The seeds have a very different taste and are one of the ingredient of curry.
stems and roots are used too...but not where I come from, unfortunately!
I discovered it by chance (the market in Leiden, on saturday morning!) and I hated it instantly. I kept hating it for a good two years, then I fell in love with it.
I started to use it in recipes that required it (got a lovely recipe for Laksa from Sharm...), my favourite tagine recipe has it (Ras El Hanout, fresh coriander and lemon...mhmm).
Now I put it in chili con carne (just a bit at the end) and Masa uses it for his oyakodon.

I LOVE CORIANDER
...maybe the receptor is inducible...a bit like alcohol dehydrogenase in asian populations...

Coming back to the title of this post...
Apicius instructs us as follows:
Assas porcellum diligenter, facies mortarium sic, in quo teres piper, anethum, origanum, coriandrum viride, admisces mel, vinum, liquamen, oleum, acetum, defritum. haec omnia calefacta perfundes et aspargis uvam passam, nucleos pineos et cepam concisam et sic inferes.

My knowedge of latin dates back to...oh, God...I'm not saying it. I'm rusted like an old dutch bike parked on the street...
But it translates, more or less, like this:
Roast the pork meat carefully; mix in a mortar pepper, dill, oregano, green coriander.Moisten with honey, wine, garum, oil, vinegar, defructum. When all of this is hot, pour it over the roast. sprinkle raisins, pine nuts and chopped onions and serve.
garum was a very salty fish-based sauce, which Romans really really loved. I guess it could be substituted with Nam Pla.
defructum was a reduction of must.
I'm gonna try it...who wants to come to dinner?

Leggi tutto

"uh?"
"no no...voglio bene a questo paese"
Buon anniversario amore mio...

It’s not really clear, but it seems MFJ and I celebrate today our “flower anniversary" (nozze di fiori). Valid presents should be flowers (of course) OR house appliances. Yep, no kidding, house appliances. I told this to my loved one this morning and we laughed SO MUCH.
“amore, why don’t you buy me a frituur machine?”

“uh?”
“so I can try making dutch bitterballen…”
“are you serious or are you kidding?”
“no no, serious. I have the recipe and I think I can make them. And if I can make them they are going to be better than the ones you get in a café. You could use the machine to make tempura, and how about some patatje met [fries with ANY sauce dutch people could think of]. Anyway, no, I am not kidding about bitterballen…I might be a bit obsessed with dutch food at the moment…it’s the 8th year crisis, you know? I start thinking that dutch food is good, if cooked well…and what I cook is good, not junk, hence…anyway, I'm trying to show all my love for this country…through food”
“you are very tired of this country”
“no no, I love it…”
How do I explain him that I feel like a culinary missionary? A sort of Missionaria Protectiva, to quote Dune …but instead of genetic plans and crossbreeding between dynasties I, more simply, would like to crossbreed good ingredients, traditional recipes, technology and a bit of funky fusion…but I’ll talk about this another time…maybe when I’ll make bitterballen using my new frituur machine.
Love is…helping each other in hopeless experiments.
Happy anniversary my love.

Hup Hup Holland 2: Pannenkoeken

1 uovo
500ml latte
250gr farina di grano saraceno
Cucchiaino di sale
Pancetta arrotolata, affettata sottile

Non so bene quali combianzioni siano permesse e quali invece no...

To celebrate MFSJ’s birthday, I made an exception to my rule of the double culinary upbringing (Japanese and Italian) and cooked pannenkoeken…dutch pancakes. MFSJ adores them…

...so I got out my favourite book and tried their recipe for pannenkoeken met speck. I did NOT follow their instructions religiously…also because I am sure their quantities were WRONG…the batter was thicker than mortar!

Here’s my version, for 8 servings (or more…)
1 egg
500ml milk
250 gr flour (buckwheat in my case, but I think any combination would be an interesting one)
Tsp salt
Thinly sliced bacon

Preparation: no, I won’t offend you…you all know how to mix the above mentioned ingredients (leave out the bacon) until you get a smooth batter…
Once you have it, warm up some oil in a large pan, pour one ladle of batter and swirl it until it covers the bottom of the pan. Cook until batter solidifies on top and colours at the bottom, then flip and continue cooking.
Bacon can be added just before the top surface solidifies, so it ends up at the bottom when you flip the pancake, or be placed in oil just before the batter goes in, then it will end up on top when you flip the pancake.
Serve warm with (if you wish) stroop (syrup).
I don’t know if my English-reading audience will be as disgusted as the Italian one…Italians are damn picky and full of food-prejudices which prevent them form enjoying a lot of lovely food…or just FOOD. Anyway…for the sake of good translation:
UAAAAAAH! I hear you, I hear you…syrup on a savoury dish? Urgh!
Well? Did YOU invent the pannenkoek? No. Some dutch people enjoy it this way, and after all the sweet syrup balances out the salty taste of bacon.
My favourite one is bacon and apple. Other toppings can be: cheese, ham, mushrooms, sugar, apple, banana, raisins, chocolate, candied ginger. I’m not sure what combinations are allowed.
If cooked without any topping, they can be kept in the fridge overnight and enjoyed the day after, like WE did. We had savoury pannenkoeken for dinner and sweet ones for breakfast.
MFSJ insisted on having her pancake served with peanut butter…I am ever more convinced that I should start calling her MFDW
