Microonde

Leggi tutto

I think I should change the title of my blog with something more kitchen-like! This post is yet another recipe! I had promised it to The Cestode, when we got talking about microwave ovens, but I don’t think he ever received it. By the way: what do you call your oven?! Do you have a pretty name for it? I use mine all the time, and I feel bad for not having given it a suitable name yet: without him (yes, it’s a HE), the Culinary Missionary would disappear in no time.
Anyway: the recipe...it’s part of my “cake of the week” challenge, which is now more of a “cake of the month or whenever I have time” challenge: microwave sponge cake!!!

Ingredients for 6 persons: 100gr flour, 1 tsp baking powder, 100gr powder sugar, 100gr softened butter, 4 yolks and 4 whites, 4 Tbsps milk, 3 Tbsps melted butter.
Other useful things: two cake moulds, round, 20cm in diameter, suitable for microwave cooking, and paper parchment.
PROTOCOL: one thing I always forget is to prepare the cake tins in advance! So, please don’t do like me and get them ready: grease them using the melted butter and place the paper on the bottom of BOTH cake moulds. There you go: done! At least you won’t end up like me: holding the bowl with the cake mix, and nowhere to pour it!
Have you prepared your moulds? Yes? Sure? I’m not going to repeat myself...now we make the cake!
Whisk the egg whites to stiff peaks. Beware: that pinch of salt your grandma always added is NOT necessary, but a little bit of cold water will perform miracles. Whisk yolks and sugar until fluffy and creamy. Sieve the flour with the baking powder and add it to the creamy mix. Slowly add the softened butter, and fold in the whites.
Pour half of your dough into one of the moulds. Cook at maximum power for 3 minutes. Press the center of the cake: it has to spring back. The cake will have detatched slightly form the sides.
Let it sit outside the oven for 5 minutes, then flip onto a plate. Cook the other half.
Add generous amount of whatever filling you want (we go japanese and add atzuki cream), place the second cake on top and go wild with the frosting! The one you see in the picture was made last march: atzuki cream as filling, chocolate and smarties as frosting...all to make MFSJ happy after a nasty fall.
Frosting is somewhat necessary: cooking with microwaves means that your cake does not change colour: it remains yellow!!!

Cubetti Tricolori

My friend “il Cestode” can be proud of the title of this post...it’s indeed the title of one of Frankie H NRG’s pieces...not my favourite, but in this context it’s perfect. Why? You won’t believe it, but this post is about COOKING...of a special kind: we are talking baby food! Here in Kikkerland (as the autochthonous people refer to this country) the frist baby food tends to be rice flour mixed to milk (powder milk, that is). I never got around understanding those tables that they give out at the Consultatie bureau, so I did it my way...when I was breastfeeding I had a very special consultant, who wrote me directly from Malaysia, but for the first baby food of MFSJ, I went back to my roots...after all, mum’s cooking is always the best.

The nighmare of vegetable stock takes you, italian mother, when your baby is 5 months old and doesn’t leave you for a LONG, LONG time. The reason why is soon explained: italian pediatricians oblige you to boil DAILY fresh vegetables, all for the sake of your little one. But when you work all day, unless you have a slave at home (or grandma living in the flat below yours), do you really want to boil potato, carrot, zucchini every day? What do you do? Me? I made a monument to my pressure cooker and my friend Fraser the Freezer. I boiled what I had to boil, then froze the stock in portions (the exact amount you need for each feeding, I did that every Saturday afternoon, and it lasted me the whole week). I used to whizz the vegetables too, individually, and place the puree in those silicon moulds for ice cubes. Once frozen (I waited a day or so), I moved the cubes to ziplock bags…I had cubes of frozen potato, frozen carrot, frozen zucchini and whatelse….tricolor cubes! Of course the vegetalbes changed depending on the season and on what MFSJ liked…to prepare the food, just microwave the stock, add the right amount of cubes (mix as you want, I used 6 cubes in total), rice flour, a little olive oil, parmesan (yep…that’s a MUST in italian home-made baby food) and meat. Oh yeah…the meat: I used to cook that one too in advance, and mince it and make little balls that I would freeze in those moulds…one portion was 2 cubes.
I don’t know how italian mums survive…I just know that after one day of running around, the mother (me) would come home exhausted and MFSJ was as hungry as a littel leech! I was able to feed her within ten minutes from entering my front door. Hurray for technology…and the tricolor cubes.

FDM / DIM

Il Signor FDM (Faccio Da Me) e’ fantastico...
Leggi tutto

Intorno all’FDM si fa silenzio.

I realized that my blog is full of acronyms...and it does happen that people ask me “who is this MFSJ? What does that mean?”...actually, I did explain it somewhere, but I have to agree, it’s not that easy to find that post...so today we start a new series of posts, they’ll appear randomly on my blog and they will be about protagonists, coprotagonists and walk-ons who appearing on the set of my life. Mr DIM (Do It Myself) is fantastic...

...as a child, he was restlessly searching for the hidden working mechanisms behind all tools and electric appliances...new radio in the house? It would disappear suddenly...DIM would secretly disassemble it completely, in the secret of his room. He would then try to put it back together, and I am convinced that more often than not ome or two bits didn’t fit anymore. According to his mum, no appliance was safe (thankfully there weren’t that many back then). Unfortunately DIM hasn’t lost his touch: the switch of our extrafcot fan was his last victim...luckily it survived. Don’t get me wrong, DIM is great, really good at what he does, but he does sometimes pushes his luck! With time, I learnt to read all the symptoms of an upcoming “I don’t get it, but I’ll figure it out” attack...my dear DIM becomes really silent, breathes in, exhales noisily. A pause (tesion in the air...) he puts his glasses on the tip of his nose. Eyes focus on the victim...silence around DIM. There is a certain scent of holiness...time slowly pass, and you can physically perceive that the oracle is about to speak.
DIM is my hero...since I came to this world.
I run to him with my broken doll, he tried to explain me trigonometry when I was in primary school, he was the one to teach me RC circuits (I could understand him, but he was the one left to wonder why I neede to know that if I was studying physiology). His ability in solving practical problems goes from home maintenance (who do you think tought me to disassemble washing machines?) to high voltage parts in Xray machines.
Anyway: a vey special hero...an answer for all of your problems, as long as tehy are not too personal...he is also a champion in browbeating...he can electrocute you just by staring at you, and he is really a man of few words. I do feel for dearest MFJ, who had to face him when he...ehm...asked him my hand ;-)
Ladies and gentlemen, DIM: my dad!

I know...I do post a lot of recipes...but this one is special, fantastic...the ideal protocol for this Culinary Missionary-meets-wannabe scientist!!!
it's a scientific chocolate mousse: ready in ten minutes...only ingredients required are 1 choccolate bar of good quality (I tried "pure", but fondant would be better), water, a calculator.

Now, look at the composition of your chocolate bar (you know, that little table that tells you calories, proteins, fats and sugars) and write down the grams of fat (keep in mind that those tales refer to 100 grams of product).
now, multiply that number by the weight of your chocolate bar in grams (sorry...we go metric here...if you want imperial, convert it) or by the total weight of chocolate you want to use. divide the lot by 34. the number you get corresponds to the cc (cubic centimeters, or milliliters, ml) of water needed.
measure the water, keep aside.
Melt the chocolate (any method would do, as long as you don't burn your precious chocolate...I put it in a little pan directly on the stove). once melted, remove from the heat and add the water (yep, old, and yep, all at once). mix until smooth (it will get smooth, don't worry...just mix gently). let it sit away from the heat for 2-3 minutes, then pour the mix into a chilled bowl places in ice. whip it up and put it in the fridge.
how does it taste? well, ehm...chocolatey? it's the same taste you'd get from eating your chocolate bar, so it can be a bit bitter. but the consistency is fabulous...soft, smooth, irresistible, as demonstrated by my faithful assistant!
you could try with sweetened water, but the sugars might change the viscosity of the liquid and the result could be less fluffy...but hey! please experiment and let me know! we just ate it, and we just added a diced banana.

now, for the explanations: the recipe is not mine. I discovered it because I read an italian blog called "science in the kitchen", but the recipe is by a certain Herve' This, founder of Molecular gastronomy (no kidding, it does exist!).
The recipe is known as chantilly chocolate, aybe because the creme chantilly is sweetened whipped cream with a vanilla flavour, invented by Francois Vatel and served at the banquet in honor of Luis XIV held by Luis Condé at Chateau Chantilly.
Anyway...my scientific mousse is called chantilly chocolate becase the melted chocolate is whipped up like you'd do for cream...and cream has afat content of 34-35% (hence the number in the little formula above..you want to imitate the fat content of cream). on top of that, cream contains fosfolipids, which act as emulsifiers...fosfolipids areweird molecules: their "head" loves water, their "feet hate it"...their ability of getting water and fat to mix comes form the fact that they sit with their heads in the water and their feet in the fat (oh dear...I hope my chemistry teacher is not reading this one). also chocolate bars contain emulsifiers...don't worry: nothing scary, all natural! it's called lecitin, and it's naturally contained on cocoa...just make sure you buy a good quality chocolate bar.
ok, I stop playing the teacher!
Mr HTML suggested me this video: have a look, if you want to see how to make this recipe.
to conclude: this one has been added to the list of recipes to be suggested to those who claim they hate cooking...the name of a certain friend from across the ocean springs to mind, but don't worry, my friend: I won't tell a soul ;-)

Marmellata

Well yes: I even made jam during our last saturthlon! Apricots looked so tasty at the market, that I didn't resist and bought some. unfortunately, they didn't survive the journey (could it be because of the sheer weight we put on them, inside our shopping bag? lots of veggies and fish?) I really didn't want to waste them, and since they were already mashed, I put the lot (minus the stones) into a pot, added one peach, one apple (for extra pectins), grated lemon zest, a bit of water and half the fruit weight in sugar. I brought it to boiling point, lowered the heat and let it simmer until it reduced a bit.
the special sterilizer for MFSJ bottles and dummies came in handy: it sterilizes in 5 minutes, using steam.
result? 4 pots of home-made jam, plus a couple of tablespoons for tasting. MFJ can't wait to try it on ICE CREAM.

Verita'

the TRUTH...is it always to be stated?
or are there circumstances where it's better to lie through your teeth, to tell one of those "half truth" or, better still, to just remain silent? I don't know, I never get it right...
You don't like the boyfriend or (EVEN WORSE) the husband of one of your friends...but you do love your friend. What do you do? keep quiet for love, or talk for the love of truth?
You hate the constant chit-chat in your office. what do you do? endure, for the sake of quiet living, or talk and get all the chickens in the office to hate you for the rest of your days?
You give a compliment and a smile or keep up a serious professional look? In the frist case, you might face misunderstandings (big ones, believe me), in the second case, you risk to become the new www (wicked witch of the west).

I don't know...I never understood this part...and because of my "lost in translation" life, I find myself keeping everything inside. I'm sure I'll explode sooner or later...KABOOM! then I won't have to worry anymore.

sabathlon

Who said that Saturday is meant for resting? Since MFSJ joined us, our Saturday is MADE FOR “working for the week ahead”, get ready for next week.
"Un sabato qualunque...un sabato italiano..."
every weekend I wake up and think about this hideous song of a log time ago...
my "average saturday" is not italian, it's dutch of course, and it's not relaxing at all. It resembles more a relay hurdles race with multiple challenges...we are athletes specialized in satur-thlon: it's fr two runners (me and MFJ) and the baton is MFSJ. It's really a lot of fun, and gives a lot of satisfaction, but like every race it requires daily training, focus, perseverance...and most importantly, you cannot drop the baton!

I can proudly say that we win the gold every time, but we do not go to the government to ask for less taxes, like some italian athletes!
So, how does this satur-thlon work?
Well, in the morning, there's grocery shopping. the night before we prepare for it, a sort of last-minute training, more mental than physical: we write down a LIST. No, no...don't think "jot down", it's meticulously exhaustive, divided per shop and topic. There’s the "supermarket list", the "market-fresh produce" list and the "other stuff" list (usually things for the house, for MFSJ, for the relatives...)
Anyway, on the morning of the race, pardon..."average saturday" this is what happens: all to the starting blocks, ready, set....no no, hang on: MFSJ doesn't want to put on her socks, and without socks, she gets blisters when she wears those shoes.
ok, never mind: you go ahead, you do the supermarket, I convince her. Ready? set...GO! and the first athlete is off, springs out of the front door holding the garbage bag (it's a silent rule in our house: if you get the kid, you don't carry the garbage). He successfully completes his javelin throwing routine and, now free of smelly burdens, jumps on the bike and heads for the supermarket. The second athlete has a much more tactical race ahead, which requires strong nerves and careful planning: MFSJ must put on shoes and jacket. After this somewhat mentally challenging part, we run for the bike...no no, hang on: we forgot Duckie (who is waiting in MFSJ's handbag, and we are girls after all...we do not leave the house without handbag). so, after a false start, here we go again: the athlete springs out of the front door, holding MFSJ and Duckie in the handbag. They reach the bike. After a challenging weight-lifting performance this exceptional sporter is already on the bike, pedaling with fury. Direction? the market.
the race is on....while one is busy throwing boxes and packages in a supermarket trolley, the other carts MFSJ around talking pigdin-dutch to passersby. Pit-stops are painstakingly calculated: only a few stalls (vegetables, fish and spices). then the home-run.

Record timing! and, more important, MFSJ didn't even throw a fit.
oh...sorry: I forgot to tell you, before heading for the shops, we start the washing machine, so that when we are back MFSJ can play with pegs and laundry while we store all the food away.
saturthlon is not over yet: we have to hang the laundry out to dry, cook lunch, wash the dishes, entertain MFSJ who (and very rightly so) wants some attention...must be the only race with an "interactive baton"...

in the afternoon, while MFSJ takes a nap (batons get tired too), we do a bit of cleaning, ironing, dusting...we dream about our future (dreams can be in future tense or present progressive...it doesn't matter). When MFSJ wakes up, we PLAY. One of the athletes take care of the baton, while the other does all the rest (we still don't know what is more challenging): cooking for the week ahead (hurray for Ridge the Fridge and Fraser the Freezer!!! always so welcoming!) washing, ironing, tidying up...MFSJ is also really good at mixing cake-doughs, so we do get alot of baking done too.

the race is almost finished, the arrival is behind the corner. first, dinner (generally fish, since we live at 10km from the sea). For dessert, MFSJ's cake.
then, it's time to hit the water: rubber duckie race and a gavettoni match.
We are at the arrival, MFSJ falls asleep. we cheer...silently of course… and holding our gold medal we proudly...hit the bed!
Tomorrow is another day, and no market.

santi protettori

S. CHIARA - PATRONA DELLE LAVANDAIE (qualora si dovesse fare le cose... a mano);
S. COLOMBARO - PROTETTORE DALLE INONDAZIONI (se il danno è grave... e l'acqua scorre...);
S. LUCIA - PATRONA DEGLI ELETTRICISTI (se il problema fosse elettrico);
S. MARIA MADDALENA - PROTETTRICE DEGLI IDRAULICI (se il problema invece fosse... il tubo rotto);
S. PIETRO - PROTETTORE DEI PESCATORI (se la faccenda diventasse drammatica...);
Beh, insomma: santi o no, siamo sopravvissuti!
Avanti la prossima sfida!

Last week two of our precious (indeed, with a two year old in the house) electric appliances gave us problems…Bernarda the Washing Machine and Fraser the Freezer. The first one decided to stop mid-cycle and Fraser dropped its…door, literally.

Desperate, I started calling out for the Good Lord, Sweet Jesus and Saint Mary…after all, I am catholic! Then I realized that the problem was very specific…one Holy Mary wasn’t enough…only Saint Plumber could answer my prayers, but I really didn’t want to spend 60 euros to get him out of his silly van and “have a look”. So I took out the “I poke my nose in it” hat, inherited by my “I do it myself” dad and set to work. I purged the water manually; open the filter (strange, it was clean) checked the little pump and tried to get Bernarda to start-up again. She complained a bit, but after a few “Sgrunt sgrunt” my old lady started working again, and the valve was turning as nothing had happened. But then I closed the filter, and Bernarda declared she wouldn’t work. Full stop. I chucked daddy’s hat and started searching for the “manual of saints” online. I really wanted to know what saint to pray under these circumstances…I found nothing. So I decided to ask my relatives: they are all in Italy, close enough to Vatican City…someone MUST know who is the saint in charge of washing machines! Nothing…silence..until, finally, I got an e-mail from my cousin (‘Cesco, you are the only one to take me seriously!). Meanwhile, Bernarda had started working again (I’ll never find out why she stopped in the first place)...but for all of you with washing machines in the house, here’s who to pray in case of troubles:
S. CHIARA (St. Claire from Assisi) – she protects washerwomen (in case you end up washing by hand)
S. COLOMBARO (can’t translate this one) – protects against floods (if the damage is bad...and water starts running)
S. LUCIA (St. Lucy)– protects electricians (in case of problems with the electric panel)
S. MARIA MADDALENA (St. Mary Magdalene) - protects plumbers (if a broken pipe is the problem)
S. PIETRO (St. Peter) – protects fishermen (if the problem is really bad and lasts for a long time, you might end up with a pond in your house…right?)
I decided to add to my own list S. BERNARDA, because that’s the name of all washing machines I met in my life (I should ask my mum why such name…maybe in another post)
If none of the abovementioned saints manages to help you and your dear old washing machine, then you really have to “invoke” the Plumber…you find him on the yellow pages.
Now, for Fraser the Freezer…he sits under Ridge the Fridge...we think that MFSJ might have used its open door as a swing once too many…when I reached for the freezer, the door FELL. Luckily we managed to “glue” it closed for a while…finally, after two hours of struggle and stress (seeing all my lovely food melting away was hart shrinking) St. Masa put the door back on.
Now I know: we had to pray St. Joseph, he was a carpenter and the problem with Fraser the Freezer was the bottom hinge!! Well, we survived…
Next challenge please!

Mass-spectacular

Ladies and gentlemen, Mr. Hans Muelmeister, PhD!!!!!!!!!

ok, here we go: another video for crazy scientists...this time the setting is one of those conferences where you are supposed to discuss amazing discoveries, almost science-fictional...in reality the environemnt ends up being SO BORING that you fall asleep even before mister chairman has had a chance to finish his introduction...
Ladies and gentlemen, Mr. Hans Muelmeister, PhD!!!!!!!!!
if you go to the corresponding youtube page, you can read the lyric there ;-)

I particularly like his "acknowledgements" session:

Right now I wanna take some time to thank the people in my lab

We got Vaneetha Adani working the Q-TOF -- you go girl, that's right.
We got Billy Jenkins on sample prep -- peace my brother.
We got Calvin Jiang on MassHunter and the METLIN database -- keep crunchin' that data amigo.

And last but not least I want to give a big shout out to Agilent Technologies. Without the 6520 Accurate-Mass Q-TOF LC/MS I wouldn't be where I am today. You're beautiful. I love you people. Stay mass spectacular. Peace. I'm out.

I haven't been to many international conferences...in fact, I have been to NONE (and I know who to thank for that) so I don't know how many group leaders have the guts to thank their "people in the lab" with something that goes beyond a sterile list of names...

Freedom

Last friday we finally went out for dinner (MFJ and I, that is....) after 1 year. what? You don't know why? don't you remember that we live in the Netherlands and the rest of the relatives is either in Italy or on the other side of the world? "there are friends", I know...but you see: MFSJ didn't sleep, AT ALL and we really didn't want to ruin a friendship with screams that would have made Hitchcock proud or tears that would have flooded the house. I know what you'll say next: "babysitter"...well, I have my Italian Mother Heart to blame for this (well, let's not forget the father's one here: just as bad, even if he's not italian!!!)

For all of you seriously concerned about our wellbeing, here's the good news: MFSJ sleeps (ehm, mostly every night) since she was 20 months old (woohoo!) and, more important, goes to bed at a decent time.
More good news: there is ANOTHER hero, apart from Totoro, which can, in case of emergency, buy you an additional 90 minutes of peace. The new hero is nothing less that the "terrible" toddler in Monsters Inc. (see any similarities here? MFSJ loves the fact that Boo has pigtails, and she has a lot of fun trying to scare us saying "boo" behind our backs...P.J.O'Sullivan, the big blue top-scarer monster, gets a new name from MFSJ: he is now known as "cookie-monster"...I guess 'cause it's blue like the character in Sesame Street)

Anyway: with two DVDs in her hand (Totoro and "Boo"), the promise that she could stay up as long as she wanted, and Mufi (aka my BIL, Brother in Law) at her total disposal, MFSJ was left at home, and MFJ and I went out for dinner...we went to a fantastic Korean restaurant...but THAT will be for another, special, post.

Perche'? Come perche'?

e voi? come vi difendete dai venditori?

I'm still fuming...
now, there's something I really hate, and I know I am not alone here: people calling you at home to sell their product.
I am SO sorry that people have to do this job...I am especially sorry when they find me answering their call.
You have to know that Ma-Nu in japanese caracters does not have a pretty meaning...at its BEST it can be translated as "angry Devil". For those of you who are wondering: yes, I can be that. I mastered the art of brow-beating from a great master (my dad), and I spiced it up with some seriously strong ability at remembering "the exact words you used", thanks to my friend Il Cestode...(aha! you see: you did make it to my blog, in the end! I know you were jelaous of Mr HTML).
Be reassured: motherhood made the angry davil revert to it's angelic roots...until I get a phone call from those I mentioned above.
what do you do to protect yourself from phone-salesmen (and women)?

Here's a few suggestions:
1- My friend Miss Piriogi just doesn't pick up her phone anymore...she uses it only to phone, but if you want to talk to her, you call her mobile.
2- Then there's the one with the answering machine: rarely salesmen leave a message, they just hung up.
3- Most of you, I am sure, just hung up...why waste time? YOU ARE SO RIGHT!
4- You could do what Mrs BBC does...she engages in magnificent arguments with the poor bugger who happens to dial her number. I have been told these arguments are fantastic...but I haven't witnessed one yet.
5- You could (this I do, sometimes, to practice my dutch) let the person say all he has to say, then say "sorry, not inerested, have a nice day"...after all, they have to do this, it's their job, so let's be kind and wish them a good day.
6- You could (this is tricky) tell them that you find all this very interesting, and would like to know more and could they please send you a leaflet. Now...here it gets really interesting: in the Netherlands, 9 times out of 10, you will be asked for a few details to be entered into their database so that they can send you the leaflet. Very well, carry on. They don't ask you your address, but your BIRTH DATE. Now, why on Earth would I want to give out that information? it's personal, and God knows, could be used to access personal data (credit card details, anyone?). so then, you go back to compete with Mrs BBC, and may the best argument win.
Once I was told that they were not willing to send me any leaflet, because that would add too much costs to their campaign...my only reply was "then you are the one who is going to lose, 'cause you won't get me as customer". The guy was so angry and demanded to know how much my electricity bill was (you guessed right: it was one of those energy companies)...of course I didn't tell him, so he accused me (really! so indisponent!) of not wanting save money...I had to agree with him: every second he spent with me on the phone, was money his company was NOT making. That said, I hung up (no, I didn't wish him a good day...he was too rude)
7- but what happened to me just now is THE BEST: the poor guy misspelled my name. It happens,I know: I guess it's hard to spell a foregn name correctly. I also have problems sometimes and can't really make sensible sounds come out of my mouth...but this time, I had to laugh...it's an italian name...not even ONE confusing "chi" or "ghi"...I was also in a very very very bad mood, so in my perfect engl-iano I told him that if he wanted to TRY and sell something over the phone, he should at least practice the name of the potential client before actually dialling the number, and didn't he agree with me? yes, he agreed. well, good for him, I wished him a good day and hung up while he was still apologizing. I know, I was a bit harsh...the poor thing was SO humiliated he couldn't even speak anymore.
I wish I could call him back and ask him to tell me all about this fantastic product that he wanted to sell...but then I'm sure I would like to have a leaflet and he would ask me my birthdate...and Ireally don't want to mash him to a pulp...one scalding from Ma-Nu is enough, right?
and you? how do you defend yourself from phone-sales?

Buon Compleanno, signorina Guanciotte!!!

August 10 is a very important night for Italians.
In our folklore the shooting stars we see on this night little have to do with the asteroids of perseo...
When you see a shooting star, a dream comes true...So we all hope for good weather, clear sky, and a special someone by our side...
then of course there is the legend, rather gruesome, that says that those specs of light are nothing less than Saint Lawrence's tears, shed while undergoing marthirdom on a griddle. The tears are doomed to travel the skies until the end of the days...and come to earth once a year, for the anniversary of the Saint's death.

for me, august 10 has another, sweeter, meaning: a very special present from St. Lawrence? I was 6 and thrilled to bits, 'cause my aunt was expecting a baby...who "arrived" the day after...later that year I started going to primary school and I still remember one of the VERY first sentences I wrote: "My little cousin F. has big puffy cheeks, as soft as foam-rubber"
Happy Birthday, Miss Guanciotte!!!!

The PCR song

For mad scientists and for the crazy ones who want do science, for the ones who do research and the ones that, well...just come to the lab 'cause they have to...here's a "new" video, by Biorad.
I still think that the ep-motion boys band was SO COOL...but I found this one today: not as good, but cute nontheless.

Here's the lyrics, you know...for those crazy scientists that love to singalong:

There was a time when to amplify DNA,
You had to grow tons and tons of tiny cells.
Then along came a guy named Dr. Kary Mullis,
Said you can amplify in vitro just as well.
Just mix your template with a buffer and some primers,
Nucleotides and polymerases, too.
Denaturing, annealing, and extending.
Well it’s amazing what heating and cooling and heating will do.
PCR, when you need to detect mutations.
PCR, when you need to recombine.
PCR, when you need to find out who the daddy is.
PCR, when you need to solve a crime.
(repeat chorus)

One thing though: how about DMSO for GC-rich sequences? Is that included in what they call "buffer"? And betaine, which I found out was the main component of Q-solution? what? aaaaaaaaaaah, true: Q-solution is from Qiagen, not Biorad...
ok, ok, ok...enjoy the singalong...I stop here

I am seriously worried. MFJ has all the sintoms of a serious case of Europe-addiction. Two recent comments made me panic:
1-this bread is good even untoasted
2-this cheese is really nice.
Like my favourite dutch friend, you are also probably thinking "what's wrong with bread and cheese?"...well, EVERYTHING is wrong! MFJ is...well, JAPANESE! He'd eat rice even for breakfast! Not only that, but the bread we are talking about is not MY home-made italian loaf, but one of those cheap pre-baked, pre-sliced, pre-packaged THINGS you buy off the shelf in a supermarket. the type of bread that when old does not go rock solid but goes MOSSY!
As for the cheese...same thing! dutch, chewy, standard taste (not even ONE cumin seed to make it remotely interesting), standard maturing time...
it's clear MFJ needed mental/culinary re-conditioning! he's getting too european.
So, I let Miep bake her cake, then I got out my japanese alter-ego. the result was a fantastic japanese dinner, followed, the day after, by a gorgeous o-bento, that can compete with those made by perfect japanese houswives.

This o-bento contains steamed rice, decorated with one umeboshi, two chinese shaomai and a triple-soy loaf. I have to admit that I bought the shaomai in the local toko, and that the umeboshi came from a little pot, gift of MFJ's grandma, but the loaf is entirely my doing. The recipe is here, follow it, and substitute the edamame with green peas.

Comments? well, MFJ wrote me "I feel like in Japan, eating my o-bento on the shinkansen".
Mission accomplished!
MFJ, dear: don't you ever scare me again with talking of tasty dutch cheese and bread!!!

Gembercake

another big blow for Miep van der Berg: her gembercake was not appreciated by MFSJ. A recipe safely kept in my recipebook for the last 5 years, a kind gift from Cori...Cori is a little lady roaming the corridors of the department where I used to work...I never understood what she was doing there, but no one else seemed to have the answer to my question~
back to the gembercake: MFSJ takes out all the bits of candied ginger!!!! but MFJ loved it...so now I am faced with a big dilemma: bake it for my husband or change recipe for my little one?

For now, let me post the recipe...
INGREDIENTS: 125gr softened unsalted butter, 100gr brown sugar, 3 yolks, 3 eggwhites whisked to stiff peaks, 125ml buttermilk, a 240gr pot of candied ginger (in syrup), 250gr wholegrain flour, 1/2 sachet of baking powder, pinch of salt.
PREPARATION: whisk butter and sugar until you get a fluffy and light mix, add the yolks. sieve the flour (re-add the bran, which won't go through the holes) with the baking powder and the salt. add a third of the flour to the egg-mix, then half buttermilk. continue adding flour and buttermilk alternating them. add ginger and its syrup only at the end, then flod in the eggwhites. bake at 160C for 70minutes.

Tonsillite

Last week MFSJ had tonsillitis.
With fever as high as 40C, my little one wanted to do only one thing: lay in bed. No watching Totoro, no Monsters Inc...only having mama in bed with her. Drinking was a big big problem, we tried water, fruit juice, isotonic drinks, milk, ice cream, melted ice cream, semi-melted ice cream, shaved ice...

...and in the desperate attempt to make her sip something, our kitchen sink piled up with ALL the glasses of the house (plastic, glass, in the shape of chalice and not), all sorts of plastic straws we could find (short, long, thin and thick, bendy and straight) and little cartons of juice (we tried even to refill those, with all the abovementioned concoctions).

Nothing to worry about, though: MFSJ is back to normal...and NO ANTIBIOTICS were necessary, hurray! (As a child, I got intoxicated with antibiotics, prescribed by my GP because I suffered, almost on a weekly basis, of tonsillitis...)
All those hours spent looking at the ceiling, in the heat of our micro-flat with a little human stove radiating heat firmly attached to my ribcage, were not wasted...my mobile phone has a new case, and I invented a little crocheted flower, which I'll never be able to reproduce and which I really don't know how to use...but MFSJ approved with a mooi, mama, and that's plenty, for mum's heart!
