Bitterballen


Le bitterballen sono i cicheti olandesi...anche se io continuo a preferire quelli veneziani...sono piccole crocchette fritte, ripiene di una specie di ragout di carne. Il nome deriva dal fatto che si mangiano per accompagnare il bittertje (bicchiere di amaro...in genere gin olandese, jenever o altro)...all'inizio pensavo fossero "bitter" perche' le si intingono nella senape...W wikipedia!

Se originariamente il ripieno era un liquidoso mix di amidi e carne, alle bitterballen tradizionali si sono aggiunte adesso altre variazioni sul tema “frittura”...nella nostra recente esperienza di polderdag, ho contato


  1. Bitterballen tradizionali
  2. Kaas souffle
  3. Pepita di pollo
  4. Crocchetta con riso
  5. Crocchetta con spaghettini
e perche' vi scrivo tutto questo?
ah si...forse non ve l'ho detto: ho la friggitrice nuova ;-)
e nella prossima puntata vi racconto come e' andata la prima prova della Missionaria Culinaria aka Miep van der Berg.

Bitterballen are the dutch version of cicheto...although I still strongly prefer the venetian ones. But anyway...these are small fried croquettes, the filling an unidentified sort of meat ragout. The name might come form the fact that they are eaten while sipping a bittertje (glass of dutch gin, jenever or other stuff)...and here was I thinking that the "bitter" part of the name was due to the fact that you dip them in mustard sauce....the power of Wikipedia!

Now, bitterballen are not only those strange crispy-outside-sluggish-inside things you eat in cafes', you can have a whole range of fried stuff! in our recent all-dutch-experience called polderdag, I counted:

  1. traditional Bitterballen
  2. cheese souffle
  3. chicken nugget
  4. rice croquette
  5. noodle croquette
But why am I telling you this?
what...didn't I say it? we have a new fry machine!!!! ;-)
