Hup Hup Holland 2: Pannenkoeken

Per festeggiare il compleanno della MSGP, ho fatto una eccezione alla regola della doppia educazione culinaria (giapponese ed italiana) e ho preparato i PANNENKOEKEN...pancake (crespelle?) olandesi. la MSGP li adora...

...cosi' ho sfoderato il mio libro preferito e mi sono cimentata nei pannenkoeken met spek. Beh, NON che abbia seguito la ricetta pedissequamente...in una noticina si nominava il grano saraceno, cosi' ho provato...e poi le dosi sul libro sono assolutamente sbagliate...secondo loro l’impasto per i pancake deve essere piu’ denso della malta!

Qui le mie dosi “corrette” per 8 porzioni (o forse anche di piu’)...
1 uovo
500ml latte
250gr farina di grano saraceno
Cucchiaino di sale
Pancetta arrotolata, affettata sottile

Preparazione: ...sono sicura che sanno tutti come mescolare i detti ingredienti (pancetta esclusa) fino ad ottenere una pastella omogenea...
Una volta ottenuto il composto, si scalda in una larga padella un po’ di olio, si versa un mestolo di composto e lo si fa girare fino a ricoprire il fondo della padella stessa. Cuocere fino a che la superficie e’ rassodata e il fondo comincia a colorirsi, girare e continuare la cottura.

La pancetta puo’ essere aggiunta poco prima che la superficie si cuocia, cosi’ da finir sotto quando si gira il frittatone, oppure puo’ essere messo in padella PRIMA dell’impasto...cosi’ finisce SOPRA quando si gira il frittatone.
Servire ben caldo, e guarnire (a piacere) con sciroppo.
UAAAAAAAAAAAH! Vi sento, vi sento...sciroppo dolce su pietanza salatissima? Urgh!
Embeh? L’avete inventato voi il pannenkoek? No. Alcuni Olandesi lo mangiano cosi’, e tutto sommato il dolce dello sciroppo attenua l’effetto pela-lingua della pancetta cotta.
Il mio preferito e’ pancetta e mela grattugiata. Altri topping classici possono essere: formaggio, prosciutto, funghi, zucchero a velo, mela, banana, uvette, cioccolato, zenzero candito. Non so bene quali combianzioni siano permesse e quali invece no...
Se cotti senza nessuna aggiunta, si possono conservare in frigorifero e mangiare il giorno dopo...come abbiamo fatto noi!!! Pannenkoeken a cena (salati) e poi anche a colazione (dolci).
La MSGP ha deciso di provare pannenkoek met pindakaas...(pancake con il burro di arachidi). Sono sempre piu’ convinta di doverla ribattezzare MOAP...

...so I got out my favourite book and tried their recipe for pannenkoeken met speck. I did NOT follow their instructions religiously…also because I am sure their quantities were WRONG…the batter was thicker than mortar!

Here’s my version, for 8 servings (or more…)
1 egg
500ml milk
250 gr flour (buckwheat in my case, but I think any combination would be an interesting one)
Tsp salt
Thinly sliced bacon

Preparation: no, I won’t offend you…you all know how to mix the above mentioned ingredients (leave out the bacon) until you get a smooth batter…
Once you have it, warm up some oil in a large pan, pour one ladle of batter and swirl it until it covers the bottom of the pan. Cook until batter solidifies on top and colours at the bottom, then flip and continue cooking.
Bacon can be added just before the top surface solidifies, so it ends up at the bottom when you flip the pancake, or be placed in oil just before the batter goes in, then it will end up on top when you flip the pancake.
Serve warm with (if you wish) stroop (syrup).
I don’t know if my English-reading audience will be as disgusted as the Italian one…Italians are damn picky and full of food-prejudices which prevent them form enjoying a lot of lovely food…or just FOOD. Anyway…for the sake of good translation:
UAAAAAAH! I hear you, I hear you…syrup on a savoury dish? Urgh!
Well? Did YOU invent the pannenkoek? No. Some dutch people enjoy it this way, and after all the sweet syrup balances out the salty taste of bacon.
My favourite one is bacon and apple. Other toppings can be: cheese, ham, mushrooms, sugar, apple, banana, raisins, chocolate, candied ginger. I’m not sure what combinations are allowed.
If cooked without any topping, they can be kept in the fridge overnight and enjoyed the day after, like WE did. We had savoury pannenkoeken for dinner and sweet ones for breakfast.
MFSJ insisted on having her pancake served with peanut butter…I am ever more convinced that I should start calling her MFDW

bacon and syrup pancakes are my favourite too! maybe it's just my mangled malaysian stomach that is happy to at least try any combination of flavours ;-)
